How an induction adapter or flame tamer works
An induction adapter is a metal plate that you place on the induction cooktop. The plate heats up and transfers that heat to the pan on top of it. This allows you to cook on induction with pans that do not have a magnetic base. Heating up takes a bit longer, and the plate remains hot for a while after cooking. You place a flame tamer on the gas stove: it distributes the heat from the flame across the entire bottom, allowing a dish to simmer gently without burning.
