How to make Moroccan mint tea

In Morocco, the teapot is called a berad. Rinse a tablespoon of green tea briefly with a splash of boiling water and discard it. Add a large bunch of fresh mint and sugar to taste, fill the pot with boiling water, and let the tea steep for a few minutes. Then, pour it into glasses from a height so that a layer of foam forms.
