How to cook with Moroccan herbs
In a tagine, spices are usually added at the beginning: briefly sauté onion with ras el hanout, cumin or cinnamon in oil so that the flavor is released, and then let the dish cook slowly. A piece of rind from a preserved lemon adds a fresh, salty touch, for example with chicken and olives. With the harira blend, you can make the famous Moroccan soup with tomato, lentils and chickpeas, which many people eat during Ramadan. Keep herbs in a dry, dark and well-sealed place to preserve their flavor for longer.
